Sundried Tomato Tofu Ricotta Pasta Bake

- as needed for recipe size Protein pasta (any type)
- 1 block (or half a block per serving) Super firm or extra firm tofu
- 10 oz package (or half for single servings) Hummus
- 4 tablespoons (or 2 per serving) Nutritional yeast
- 3 teaspoons (or about 1.5 per serving) Italian seasoning
- 1 teaspoon (adjust to taste) Salt
- Juice of half a lemon Lemon juice
- 1 whole can (or adjust as desired) Spaghetti sauce (or favorite pasta sauce)

- one big handful per pan, chopped Spinach

Steps
- Boil water and cook the protein pasta according to package directions.
- While the pasta is boiling, prepare the tofu ricotta: crumble the block of firm or extra-firm tofu into a bowl.
- Add the entire 10 oz package of hummus to the crumbled tofu.
- Stir in 4 tablespoons of nutritional yeast (or 2 per serving).
- Add 3 teaspoons of Italian seasoning (or about 1.5 per serving) and salt, starting with 1 teaspoon.
- Add the juice of half a lemon to give it tanginess.
- Drain the cooked pasta and place it in a large pot or bowl.
- Stir in the entire can of spaghetti sauce until well coated.
- Preheat your oven to 350°F.
- Divide the sauced pasta between two sheet pans, spreading it out evenly.
- Dollop the tofu ricotta mixture onto each sheet pan.
- Chop one big handful of spinach and sprinkle it over the ricotta on both pans.
- Finely chop cherry tomatoes and add them to the top of both pans.
- Add chopped sundried tomatoes (as desired) to one or both pans.
- Bake for 15 to 20 minutes.
