Super Soft Flour Tortillas

- Add 6 cups all-purpose flour and 2 1/2 tsp salt to a bowl; mix with hand.
- Slowly pour in 3 cups heavy cream and mix.
- Add 3/4 cup hot water gradually, mixing until a dough forms.
- Cover and rest dough 5 minutes.
- Turn dough onto a clean countertop and knead about 5 minutes until smooth and not sticky (do not add more flour).
- Divide dough into balls of desired size; place on parchment paper and cover with plastic wrap.
- Rest covered dough balls for at least 20 minutes.
- Heat a comal over medium heat.
- Lightly flour countertop; roll out each dough ball with a rolling pin into a circle, flipping and rolling in both directions. Shake off excess flour.
- Place tortilla on hot comal; cook about 20 seconds until it begins to blister, then flip.
- Cook another 15-20 seconds until tortilla puffs, then flip once more for 5 seconds.
- Remove from comal and keep wrapped in a kitchen towel. Repeat with remaining dough.
