- 3 lbs beef chuck roast (or pork shoulder)
- 4 tsp salt
- 1 tbsp bibon (chicken bouillon)
- 1 whole onion
- 1 head garlic
- 8 bay leaves
- 5 cups water
- 10 New Mexico guajillo chile pods
- 3 garlic cloves
- 1 tsp oregano
- 1/2 tsp cumin seeds
- 2 tbsp oil
- 2 tbsp flour
- 2 tsp chili powder
- 2 bay leaves (additional)

Steps
- Add beef chuck roast, salt, bouillon, onion, garlic, 8 bay leaves, and water to a pressure cooker. Pressure cook on high for 1 hour.
- Release steam, open pot, remove meat, onion, garlic, and bay leaves.
- Clean New Mexico guajillo chile pods, remove seeds, and soak in the broth for 5 minutes.
- Shred the meat.
- Transfer softened chiles and 3 cups of broth to a blender with garlic cloves, oregano, and cumin seeds. Blend until smooth.
- Heat 2 tbsp oil in a pan over medium heat. Add 2 tbsp flour and cook for 1 minute.
- Add chili powder, mix, then pour in the blended chile sauce. Bring to a simmer.
- Taste and adjust salt. Add shredded meat and 2 bay leaves.
- Reduce heat to low and simmer for 15 minutes.
