Authentic Shredded Beef Chile Colorado

Ingredients

  • 3 lbs beef chuck roast (or pork shoulder)
  • 4 tsp salt
  • 1 tbsp bibon (chicken bouillon)
  • 1 whole onion
  • 1 head garlic
  • 8 bay leaves
  • 5 cups water
  • 10 New Mexico guajillo chile pods
  • 3 garlic cloves
  • 1 tsp oregano
  • 1/2 tsp cumin seeds
  • 2 tbsp oil
  • 2 tbsp flour
  • 2 tsp chili powder
  • 2 bay leaves (additional)

Steps

  1. Add beef chuck roast, salt, bouillon, onion, garlic, 8 bay leaves, and water to a pressure cooker. Pressure cook on high for 1 hour.
  2. Release steam, open pot, remove meat, onion, garlic, and bay leaves.
  3. Clean New Mexico guajillo chile pods, remove seeds, and soak in the broth for 5 minutes.
  4. Shred the meat.
  5. Transfer softened chiles and 3 cups of broth to a blender with garlic cloves, oregano, and cumin seeds. Blend until smooth.
  6. Heat 2 tbsp oil in a pan over medium heat. Add 2 tbsp flour and cook for 1 minute.
  7. Add chili powder, mix, then pour in the blended chile sauce. Bring to a simmer.
  8. Taste and adjust salt. Add shredded meat and 2 bay leaves.
  9. Reduce heat to low and simmer for 15 minutes.
