Steps
- Chop onion into big chunks.
- Slice red bell pepper.
- Slice tomatoes.
- Add chopped onion, bell pepper, and tomatoes to a pot.
- Add minced garlic and simmer for 30 minutes until veggies are soft.
- Blend vegetables into a smooth puree.
- Pour puree into a big container.
- Add 2 Tbsp salt.
- Add 2 cups semolina and mix until thick.
- Add 0.66 lb medium-fat yogurt and mix until uniform.
- Let the mixture rest for 30 to 50 minutes.
- Gradually add flour until dough doesn't stick to hands.
- Shape dough into a thick sausage, slice into chunks, and flatten into discs.
- Dry in oven at 170-180°F for 2-3 hours or air dry for 2-3 days.
- Break into rough pieces and blend into granules.
- Store granules in bone-dry jars, wipe rims with vinegar.
- For emergency method: mix granules with boiling water in 60 seconds.
- For cooked method: saute briefly, add beef bouillon cube, pour in granules, and simmer for 5-7 minutes.
