Steps

  1. Mix sliced steak, ground beef, onion, minced garlic, lime juice, salt, smoked paprika, black pepper, chili powder, ground cumin, oregano, and beer. Let marinate for a few minutes.
  2. Make avocado salsa: blend avocados, chile serrano or jalapeño, garlic cloves, onion, lime juice, cilantro, salt, black pepper, and water until smooth.
  3. Heat griddle over medium-high heat and melt lard or oil.
  4. Cook meat in batches for 5-7 minutes until fully cooked. Cover with foil. Also cook onions and yellow pepper.
  5. Clean comal and reduce heat to medium-low. Warm tortillas.
  6. Move warmed tortilla to the side, add queso Oaxaca, and place tortilla over the cheese. Allow cheese to melt and create a crust.
  7. Stack tacos: layer avocado salsa, meat with lime juice, onion, cilantro, and salsa taquera.
