- 1 tbsp or 2 g Cumin seeds
- 1 tbsp or 3 g White pepper corns
- 9 Thai chilies (very thinly sliced)
- 3 Serrano chilies (sliced)
- 2 Shallots (small, sliced)
- 7 Garlic cloves
- 4 Cilantro stems
- 1 Lemongrass stalk
- 2-inch Galangal knob (peeled)
- 3 Kaffir lime leaves (finely shredded)
- 2 tbsp or 28 mL Vegetable oil
- 3/4 cup or 177 mL Chicken stock
- 1 tbsp or 17 g Palm sugar
- 2 tbsp or 30 mL Fish sauce
- 1 1/3.5 oz or 400 mL Full fat coconut milk (can)
- 3 Kaffir lime leaves (additional, for broth)
- 3/4 of a lb or 340 g Boneless and skinless chicken thighs
- 1 to 2 Thai eggplants (sliced half-inch thick)
- 1 1/2 cups or 160 g Snow peas
- Juice of one lime Lime juice
- 2 Thai Basil leaves (large sprigs)
