Steps
- Begin by chopping the onion.
- Slice a few stalks of green onion.
- Pound the garlic using plastic wrap to make it convenient.
- If ribs have a membrane on the back, insert a pairing knife under the ribs close to the bone and peel off the thin membrane layer.
- Cut the ribs and immerse them in cold water to eliminate any bone fragments.
- Drain the water and pat the ribs dry with a paper towel.
- In a small bowl, combine dark soy sauce, light soy sauce, and cooking wine. Mix well and set it aside.
- Prepare a large skillet and heat it over medium heat.
- Add vegetable oil to the pan and place the ribs into the pan.
- Cook the ribs until they are golden brown on both sides.
- Introduce onion, garlic, and ginger to the pan and stir fry for about 2 minutes until the vegetables soften.
- Pour the prepared sauce over the ribs and give it a stir.
- Add dark brown sugar to the mixture.
- Thoroughly mix all ingredients and add water to the pan.
- Cook over medium-low heat for 25 minutes, covering with the lid. If it lacks water, add half a cup of water to ensure the ribs are fully cooked.
- Increase the heat and cook to reduce the liquid until it thickens (ideally until there are approximately 5 to 6 tablespoons of sauce).
- Turn off the heat and sprinkle green onion over the meat.
