Dirty Cabbage

Ingredients

  • andouille sausage
  • ground beef (80/20)
  • head of cabbage
  • bell peppers (green, yellow, orange, red)
  • onion
  • garlic
  • Cajun seasoning
  • extra virgin olive oil
  • butter
  • broth
  • Worcestershire sauce
  • black cracked pepper
  • splash vinegar
  • green onion

Steps

  1. Slice andouille sausage into medallions. Heat Dutch oven over medium flame with a little olive oil and brown sausage about 4 minutes, flipping halfway. Remove and set aside.
  2. Raise heat to medium-high. Add ground beef to the same pot with rendered drippings. Break up with a meat masher and brown.
  3. Add butter to the beef. Add diced onion and give it a 30-second head start.
  4. Add sliced bell peppers (all colors). Add minced garlic. Stir and cook until fragrant.
  5. Season with Cajun seasoning and fresh black cracked pepper. Stir to combine.
  6. Core and chop cabbage into large pieces. Add to the pot in batches.
  7. Return andouille sausage to the pot.
  8. Add broth and Worcestershire sauce. Stir so all cabbage gets wet.
  9. Cover with lid and steam over medium heat for about 10 minutes until cabbage is tender.
  10. Remove lid. Add a splash of vinegar, stir, and taste. Adjust seasoning if needed.
  11. Serve over rice, topped with diced green onion.
