- andouille sausage
- ground beef (80/20)
- head of cabbage
- bell peppers (green, yellow, orange, red)
- onion
- garlic
- Cajun seasoning
- extra virgin olive oil
- butter
- broth
- Worcestershire sauce
- black cracked pepper
- splash vinegar
- green onion

Steps
- Slice andouille sausage into medallions. Heat Dutch oven over medium flame with a little olive oil and brown sausage about 4 minutes, flipping halfway. Remove and set aside.
- Raise heat to medium-high. Add ground beef to the same pot with rendered drippings. Break up with a meat masher and brown.
- Add butter to the beef. Add diced onion and give it a 30-second head start.
- Add sliced bell peppers (all colors). Add minced garlic. Stir and cook until fragrant.
- Season with Cajun seasoning and fresh black cracked pepper. Stir to combine.
- Core and chop cabbage into large pieces. Add to the pot in batches.
- Return andouille sausage to the pot.
- Add broth and Worcestershire sauce. Stir so all cabbage gets wet.
- Cover with lid and steam over medium heat for about 10 minutes until cabbage is tender.
- Remove lid. Add a splash of vinegar, stir, and taste. Adjust seasoning if needed.
- Serve over rice, topped with diced green onion.
