Caribbean Cabbage with Chicken and Sausage

Ingredients

  • as needed Chicken breast
  • a few Butter cubes
  • as needed Avocado oil
  • 1 Red onion (for chicken)
  • several Carrots
  • as needed Chicken broth
  • 1 Bay leaf
  • 1 large head Cabbage
  • as desired Turkey sausage (or beef/pork Italian sausage)
  • as desired Bacon
  • 2-3 Bell peppers (yellow, red, or green)
  • several Tomatoes
  • 1 large Onion (for cabbage mix)

Steps

  1. Season the chicken breasts using your preferred seasonings.
  2. Cut butter into cubes and place them in slits cut into the chicken breast.
  3. Heat avocado oil in a pan and sear both sides of the seasoned chicken until golden brown.
  4. Rough chop the red onion.
  5. Peel and wash the carrots, then chop them to your desired size.
  6. Pour chicken broth over the seared chicken. Add the chopped carrots, red onions, and one bay leaf.
  7. Preheat oven to 375°F and cover the pan with a lid. Cook for 35 to 45 minutes until the chicken is cooked through.
  8. Wash and roughly chop the cabbage.
  9. Cook turkey sausage (or chosen meat) in a separate pan using avocado oil until golden brown, then remove from the pan.
  10. Add bacon to the same pan with the sausages and cook until crispy.
  11. Cut tomatoes into halves or desired pieces. Add them to the pan with the cooked sausage and bacon.
  12. Rough chop bell peppers (yellow, red, or green) and add them to the pan with the tomatoes.
  13. Rough chop a large onion and add it to the pan with the vegetables.
  14. Stir all the ingredients together in the pan until combined.
