Caribbean Cabbage with Chicken and Sausage

Ingredients
- as needed Chicken breast
- a few Butter cubes
- as needed Avocado oil
- 1 Red onion (for chicken)
- several Carrots
- as needed Chicken broth
- 1 Bay leaf
- 1 large head Cabbage
- as desired Turkey sausage (or beef/pork Italian sausage)
- as desired Bacon
- 2-3 Bell peppers (yellow, red, or green)
- several Tomatoes
- 1 large Onion (for cabbage mix)

Steps
- Season the chicken breasts using your preferred seasonings.
- Cut butter into cubes and place them in slits cut into the chicken breast.
- Heat avocado oil in a pan and sear both sides of the seasoned chicken until golden brown.
- Rough chop the red onion.
- Peel and wash the carrots, then chop them to your desired size.
- Pour chicken broth over the seared chicken. Add the chopped carrots, red onions, and one bay leaf.
- Preheat oven to 375°F and cover the pan with a lid. Cook for 35 to 45 minutes until the chicken is cooked through.
- Wash and roughly chop the cabbage.
- Cook turkey sausage (or chosen meat) in a separate pan using avocado oil until golden brown, then remove from the pan.
- Add bacon to the same pan with the sausages and cook until crispy.
- Cut tomatoes into halves or desired pieces. Add them to the pan with the cooked sausage and bacon.
- Rough chop bell peppers (yellow, red, or green) and add them to the pan with the tomatoes.
- Rough chop a large onion and add it to the pan with the vegetables.
- Stir all the ingredients together in the pan until combined.
