Fava Beans

- 400 g Dried fava beans
- 2 Chopped onions (big chunks)
- Enough to pass about three fingers long over the beans Water
- 80-100 ml Olive oil
- To taste Salt
- A bit Sugar

- Rinse the dried fava beans to remove dust.
- Place the rinsed fava beans and chopped onions in a pot or pressure cooker. Add enough water so that it is about three fingers long above the beans (use less if using a pressure cooker).
- Cook until the fava beans have absorbed all the water and become soft enough to be pureed.
- Transfer the mixture into a hand blender and blend until it is incredibly soft.
- Pour the puree into a cold container, ensuring that all sides are coated with olive oil. Let it come to room temperature, then refrigerate for at least four hours (overnight is better) until stiff.
- Using the back of a knife, separate the fava mixture from the side of the plate/container.
- Place the fava onto a straight plate or tray and turn it to create desired shapes like diamonds or squares.
- Garnish with olive oil and dill.
