Fava Beans

Ingredients

  • 400 g Dried fava beans
  • 2 Chopped onions (big chunks)
  • Enough to pass about three fingers long over the beans Water
  • 80-100 ml Olive oil
  • To taste Salt
  • A bit Sugar

Steps

  1. Rinse the dried fava beans to remove dust.
  2. Place the rinsed fava beans and chopped onions in a pot or pressure cooker. Add enough water so that it is about three fingers long above the beans (use less if using a pressure cooker).
  3. Cook until the fava beans have absorbed all the water and become soft enough to be pureed.
  4. Transfer the mixture into a hand blender and blend until it is incredibly soft.
  5. Pour the puree into a cold container, ensuring that all sides are coated with olive oil. Let it come to room temperature, then refrigerate for at least four hours (overnight is better) until stiff.
  6. Using the back of a knife, separate the fava mixture from the side of the plate/container.
  7. Place the fava onto a straight plate or tray and turn it to create desired shapes like diamonds or squares.
  8. Garnish with olive oil and dill.
