Steps
- Slice the chicken breast thinly across the grain to ensure tenderness.
- Prepare a marinade using soy sauce, dark soy sauce, Chinese shouting wine (optional), bicarb soda, and corn flour. Mix well.
- Marinate the sliced chicken in the mixture until ready for cooking.
- Heat a wok or very wide pan over high heat with oil until smoking hot.
- Add the onion to the hot pan and allow it to char slightly before adding other ingredients.
- Spread the marinated chicken across the pan, ensuring not to touch or move it while it cooks. Let it sear for about three to four minutes until browned on the bottom.
- Stir-fry the cooked chicken with the onion mixture.
- Add the rough chopped garlic and capsicum to the wok, tossing them around to cook until tender.
- Pour the stir-fry sauce (made from hoisin sauce, soy sauce, sugar, vinegar, ground black pepper) around the edges of the pan to allow it to bubble and thicken.
- Toss all ingredients together with the sauce. Finally, add the spring onions and toss everything through until heated through.
