Korean Beef and Rice One-Pot

Ingredients

  • 500 g Minced beef (less than 5% fat)
  • 1 can Black beans
  • 1 tin Chopped tomatoes
  • 4 tsp Soy sauce
  • 4 tbsp Gochujang paste (Korean fermented bean paste)
  • As needed for slow cooker / 125 ml extra if using oven/casserole pot Water
  • 300 g Bean sprouts

Steps

  1. Place the minced beef in the slow cooker.
  2. Add the black beans, chopped tomatoes (filling up the tin), soy sauce, and gochujang paste to the slow cooker.
  3. Stir everything around until combined.
  4. Cover the slow cooker with the lid and cook for 4 hours. (Alternatively, transfer to a tight-fitting casserole pot, add an extra 125 ml of water, and cook on low in the oven for about 2 hours).
  5. While the main dish cooks, boil water and place it over the bean sprouts to heat them through.
  6. Once the rice is cooked (after approximately 3 hours), stir the heated bean sprouts into the slow cooker.
