- 3 Medium potatoes
- 2 Chicken breasts
- 2 Whole eggs
- 100 g Unsweetened natural yogurt
- 1 tsp (plus pinches) Salt
- 1 pinch (plus more) Black pepper
- 1/2 Red onion
- 50 g per packet Softened unsalted butter
- 50 g Broccoli
- 5 per packet Tomato slices
- 100 g Grated mozzarella

Steps
- Shape a sheet of aluminum foil around a small bowl to form foil packets.
- Cut three medium potatoes and two chicken breasts.
- In a small bowl, combine two whole eggs, 100 g unsweetened natural yogurt, 1 tsp salt, and a pinch of black pepper.
- In a large baking tray, add the foil packets and fill them with the potato slices.
- Season the potatoes with a pinch of salt and black pepper, and add half a red onion cut into thin strips on top.
- Add the chicken cubes on top of the potatoes.
- In each foil packet add 50 g of softened unsalted butter and season with another pinch of salt and black pepper.
- Add 50 g of broccoli cut into smaller pieces.
- Divide the egg mixture between the packets.
- Add five tomato slices to each packet and top with 100 g of grated mozzarella.
- Bake in a preheated oven at 350F for 40 minutes.
