Steps

  1. Season the chicken wings by adding baking powder and dry seasoning (chili flakes, salt, garlic powder, pepper) to a bowl and mixing well.
  2. Prepare the Thai sauce: In a clean bowl, combine Thai chili sauce, brown sugar, sesame oil, fish sauce, coconut aminos (or soy sauce), rice vinegar, lime juice, and sriracha sauce. Mix thoroughly.
  3. Pour about half a cup of the prepared Thai sauce over the seasoned chicken wings and mix well.
  4. Let the wings sit for 20 minutes to marinate.
  5. Prepare the baking sheet by lining it with aluminum foil and spraying it with cooking spray.
  6. Arrange the marinated chicken pieces on the baking sheet, skin side down, leaving space between them to allow heat circulation.
  7. Place the baking sheet in the oven preheated to 400°F for 20 minutes.
  8. Flip the wings over halfway through the cooking process (around the 20-minute mark).
  9. While the wings cook, prepare the glaze: In a pan over medium heat, sauté chopped garlic for about one minute until fragrant, ensuring it does not burn.
  10. Add the remaining Thai sauce to the pan and continue cooking over medium heat for about 5 minutes until the sauce thickens.
  11. Remove the thickened sauce from the heat and set aside.
  12. After the initial 20 minutes of baking, flip the wings again to ensure even cooking.
  13. Return the wings to the oven for an additional 20 minutes.
  14. Once the wings are cooked, brush them with the prepared glaze/sauce.
  15. Return the glazed wings to the oven for another 3-5 minutes. Flip the wings halfway through this glazing period (if desired).
  16. Remove the finished wings from the baking sheet and transfer them to a serving bowl.
  17. Pour any remaining sauce over the wings and toss gently.
  18. Garnish with cilantro, green onions, and red chili flakes before serving.
