- 4 large or 6 small potatoes
- 8 oz chorizo
- onion
- jalapeño
- 2 Roma tomatoes
- 8 tomatillos
- 1 avocado
- handful cilantro
- 2 garlic cloves

- black pepper
- 1 Tbsp cornstarch
- queso Oaxaca
- crema fresca
- queso fresco
- lettuce

Steps
- Preheat pan over medium-high heat and cook chorizo until broken down.
- Add cubed potatoes, season with salt and black pepper, cook for 5 minutes.
- Add diced onion and jalapeño, cook for 3 minutes.
- Remove excess oil, add Roma tomatoes, cook for another 5 minutes.
- Smash potatoes partially, add cornstarch and mix well.
- Add queso Oaxaca and set filling aside.
- Boil tomatillos, onion, and chiles serranos, then blend with cilantro, garlic, salt, avocado, and 1/4 cup water.
- Soften corn tortillas and fill with potato mixture, fold closed.
- Deep fry tacos until golden on both sides, drain excess oil.
- Serve tacos topped with lettuce, crema fresca, queso fresco, salsa, and pickled onions.
