Ingredients

  • 4 large or 6 small potatoes
  • 8 oz chorizo
  • onion
  • jalapeño
  • 2 Roma tomatoes
  • 8 tomatillos
  • 1 avocado
  • handful cilantro
  • 2 garlic cloves
  • corn tortillas
  • salt
  • black pepper
  • 1 Tbsp cornstarch
  • queso Oaxaca
  • crema fresca
  • queso fresco
  • lettuce
  • pickled onions

Steps

  1. Preheat pan over medium-high heat and cook chorizo until broken down.
  2. Add cubed potatoes, season with salt and black pepper, cook for 5 minutes.
  3. Add diced onion and jalapeño, cook for 3 minutes.
  4. Remove excess oil, add Roma tomatoes, cook for another 5 minutes.
  5. Smash potatoes partially, add cornstarch and mix well.
  6. Add queso Oaxaca and set filling aside.
  7. Boil tomatillos, onion, and chiles serranos, then blend with cilantro, garlic, salt, avocado, and 1/4 cup water.
  8. Soften corn tortillas and fill with potato mixture, fold closed.
  9. Deep fry tacos until golden on both sides, drain excess oil.
  10. Serve tacos topped with lettuce, crema fresca, queso fresco, salsa, and pickled onions.
