Thai Basil Chicken

- 1 Shallot
- 3 Garlic cloves
- 1 Red bell pepper
- 1 pound Ground chicken (or turkey/pork)
- 2 tablespoons Fish sauce
- 3 teaspoons Brown sugar
- 1 tablespoon Thick soy sauce
- 2 to 1/4 cup Chicken broth
- Juice of half a lime Lime juice
- One whole bunch Thai basil leaves

Steps
- Heat a wok or frying pan over high heat and drizzle with oil.
- Add the shallot, garlic cloves, and sliced red bell pepper to the hot oil. Sauté for about three minutes until fragrant.
- Add 1 pound of ground chicken (or turkey/pork) to the wok. Stir constantly and cook for about five minutes until it is almost cooked through.
- Crumble the cooked chicken into large and small pieces using a cooking spoon.
- Add fish sauce, brown sugar, thick soy sauce, and chicken broth to the chicken mixture.
- Let the sauce reduce by half while the chicken finishes cooking.
- Finish the dish with the juice from half a lime and one whole bunch of Thai basil leaves. Turn off the heat and let the residual heat wilt the basil for about 10 minutes.
- Serve the Thai Basil Chicken over cooked white rice, garnished with extra sauce, and optionally serve alongside a carrot slaw salad.
