Simplified Thai Green Curry

- 1 tbsp Green curry paste
- 270 ml (one small can) Coconut milk
- 500 g Pork (or chicken, fish, shrimp/prawn)
- some Green beans
- some Red capsicum (bell pepper)
- some Carrots
- some Baby corn
- 2 tbsp Brown sugar
- 2 tbsp Fish sauce

Steps
- In a big pot or wok over medium to high heat, stir about 1 tablespoon of green curry paste until it starts to become fragrant (about one minute).
- Add 270 ml (one small can) of coconut milk and stir until the sauce begins to simmer.
- Add in 500 g of thinly sliced pork (or chosen meat/protein), stirring for about 2 minutes to cook through in the lovely sauce.
- Next, add the vegetables: green beans, red capsicum (bell pepper), carrots, and baby corn. Carefully toss all together.
- Cover the wok and allow it to simmer for about 5 minutes until the veggies are nice and tender.
- Add 2 tablespoons of brown sugar and 2 tablespoons of fish sauce.
- Stir around to ensure everything is evenly mixed in, then serve.
