- 2 lemons
- 1 envelope unflavored gelatin
- cream cheese
- evaporated milk
- sweetened condensed milk
- Mexican vanilla blend
- galletas Marias
- cookie crumbs
- lemon zest
- lemon and lime wedges

Steps
- Squeeze juice from 6 limes and 2 lemons to get 3/4 cup.
- Dissolve 1 envelope of unflavored gelatin in 1/4 cup of the juice.
- Allow gelatin to bloom for 5 minutes.
- Microwave gelatin for 15 seconds until liquefied.
- Blend cream cheese, evaporated milk, sweetened condensed milk, and Mexican vanilla blend at low speed until smooth.
- Slowly pour lemon lime juice (with gelatin) into the blender mixture.
- Spread a small layer of mixture in a baking dish, then add a layer of galletas Marias.
- Repeat layering until mixture is used up.
- Cover and refrigerate overnight or for at least 4 hours.
- Decorate with cookie crumbs, lemon zest, and lemon and lime wedges before serving.
