  • 6 limes
  • 2 lemons
  • 1 envelope unflavored gelatin
  • cream cheese
  • evaporated milk
  • sweetened condensed milk
  • Mexican vanilla blend
  • galletas Marias
  • cookie crumbs
  • lemon zest
  • lemon and lime wedges

Steps

  1. Squeeze juice from 6 limes and 2 lemons to get 3/4 cup.
  2. Dissolve 1 envelope of unflavored gelatin in 1/4 cup of the juice.
  3. Allow gelatin to bloom for 5 minutes.
  4. Microwave gelatin for 15 seconds until liquefied.
  5. Blend cream cheese, evaporated milk, sweetened condensed milk, and Mexican vanilla blend at low speed until smooth.
  6. Slowly pour lemon lime juice (with gelatin) into the blender mixture.
  7. Spread a small layer of mixture in a baking dish, then add a layer of galletas Marias.
  8. Repeat layering until mixture is used up.
  9. Cover and refrigerate overnight or for at least 4 hours.
  10. Decorate with cookie crumbs, lemon zest, and lemon and lime wedges before serving.
