- 1 lb flank steak
- carne asada seasoning
- salt

- 12 guajillo peppers

- 5 chile de arbol
- 1 Roma tomato
- 3 garlic cloves

- 2 1/2 cups water

Steps
- Season the beef steak with carne asada seasoning, salt, and black pepper.
- Prepare the chiles for the sauce: add 12 guajillo peppers, 1 chile ancho, 5 chile de arbol, and 1 Roma tomato to a saucepan, cover with water, boil, then transfer to blender.
- Add 3 garlic cloves, 1/2 tsp oregano, ground cumin, and 2 1/2 cups water to blender; blend until smooth.
- Fry tortilla triangles in oil over medium heat until golden; drain and set aside.
- Remove most oil from pan, cook steak over medium heat about 5 minutes; remove.
- Add a little oil, saute onion for a couple minutes, then add the chile sauce, simmer 5 minutes.
- Add fried tortilla chips to the sauce and coat well.
- Top with queso Oaxaca, cooked steak, more queso Oaxaca, purple onions, and cilantro.
- Cover and let cheese melt, then serve.
