Crustless Quiche with Spinach and Gruyere

- 1 cup shallots
- 5 oz baby spinach
- about 1 cup grated Gruyere cheese
- 1 tbsp olive oil
- 2 garlic cloves
- 6 large eggs
- 1 cup heavy cream
- half a tsp kosher salt
- a quarter tsp ground black pepper

Steps
- Heat olive oil in a skillet over medium heat.
- Add sliced shallots and sauté for 2-3 minutes until softened.
- Add minced garlic and sautéed spinach for 30 seconds to 1 minute.
- Transfer mixture to a greased 9-inch pie dish and let cool slightly.
- Whisk eggs, cream, salt, and pepper, then mix in Gruyere cheese.
- Pour egg mixture over spinach-shallot mixture.
- Bake in a preheated 350°F oven for 30-35 minutes until set.
- Serve with avocado and cracked black pepper if desired.
