Steps

  1. Cut the broccoli into florets.
  2. Mince about three cloves of garlic and a little ginger.
  3. Prepare the basic sauce by mixing 1/4 teaspoon salt, 1/4 teaspoon sugar, 1/2 teaspoon corn starch, optional MSG, and 1 tablespoon water.
  4. Blanch the broccoli in boiling water for about 20 seconds to give it a vibrant color and soften it quickly.
  5. Remove the broccoli from the boiling water and run it under cool water or an ice bath to stop the cooking process.
  6. Heat a wok over medium-high heat with oil until piping hot, then turn off the heat and swirl the oil around for a non-stick surface.
  7. Turn the heat back on to medium-high. Add the minced garlic and ginger and fry for about 15 seconds until fragrant.
  8. Toss in the broccoli.
  9. Immediately pour the prepared sauce over the broccoli, stirring constantly.
  10. Fry for another quick 15 seconds, ensuring there is no obvious liquid left.
  11. Remove the broccoli from the wok.
