- 700 grams bitter gourd
- one-fourth cup yellow mustard
- 10 to 12 whole black peppers
- one spoon cumin
- one spoon coriander
- 25 grams garlic
- seven to eight green chillies
- 3 inches ginger
- one big chopped onion
- to taste coriander leaves
- optional lemon juice
- optional mango pickle
- two spoons oil
- half a teaspoon turmeric
- to taste salt

Steps
- Wash the bitter gourd thoroughly with water.
- Remove its peel.
- Boil it in a pressure cooker with water, turmeric, and salt for one whistle.
- Prepare the masala with mustard, black peppers, cumin, coriander, garlic, green chillies, ginger, onion, and coriander leaves.
- Cool the boiled bitter gourd, remove seeds, and roast them with spices.
- Mix masala with roasted seeds, salt, and coriander leaves.
- Stuff the masala into the cooled bitter gourd.
- Tie the stuffed bitter gourd with a thread to prevent opening during cooking.
- Cook the stuffed bitter gourd in a pan with oil on low flame until golden brown on all sides.
