Teriyaki Chicken

- 1/4 cup mirin
- 1/4 cup sake
- 1/4 cup low sodium soy sauce
- 2-4 tablespoons brown sugar
- 1/2 teaspoon ground ginger
- garlic powder
- chili flakes
- 2 lbs chicken thigh
- salt
- black pepper
- cornstarch
- oil
- water

Steps
- Mix mirin, sake, soy sauce, brown sugar, ground ginger, garlic powder, and chili flakes in a measuring cup. Set aside.
- Season chicken thighs with salt and black pepper, then coat both sides with cornstarch.
- Heat oil in pan over medium-high heat. Cook chicken for 4-5 minutes per side. Remove and set aside.
- Deglaze pan with water and reduce heat to medium.
- Pour sauce into pan and cook for 5 minutes, stirring constantly.
- Return chicken to sauce and cook for another 2 minutes until coated and sauce is thickened.
- Turn off heat and let rest a few minutes before serving.
