Teriyaki Chicken

Ingredients

  • 1/4 cup mirin
  • 1/4 cup sake
  • 1/4 cup low sodium soy sauce
  • 2-4 tablespoons brown sugar
  • 1/2 teaspoon ground ginger
  • garlic powder
  • chili flakes
  • 2 lbs chicken thigh
  • salt
  • black pepper
  • cornstarch
  • oil
  • water

Steps

  1. Mix mirin, sake, soy sauce, brown sugar, ground ginger, garlic powder, and chili flakes in a measuring cup. Set aside.
  2. Season chicken thighs with salt and black pepper, then coat both sides with cornstarch.
  3. Heat oil in pan over medium-high heat. Cook chicken for 4-5 minutes per side. Remove and set aside.
  4. Deglaze pan with water and reduce heat to medium.
  5. Pour sauce into pan and cook for 5 minutes, stirring constantly.
  6. Return chicken to sauce and cook for another 2 minutes until coated and sauce is thickened.
  7. Turn off heat and let rest a few minutes before serving.
