Ingredients

  • 1/4 cup ground flax seeds
  • 1/4 cup water
  • 2 tablespoons espresso or strong pour over coffee
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted vegan butter
  • 1 cup dairy-free dark chocolate
  • 1 cup all-purpose flour
  • 1/3 cup Dutch processed cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Steps

  1. Combine flax seeds, water, and espresso in a bowl.
  2. Add granulated sugar, brown sugar, and vanilla extract.
  3. Set up a double boiler with water in a saucepan and heat.
  4. Add unsalted vegan butter and dairy-free dark chocolate to the double boiler bowl.
  5. Melt chocolate mixture, remove from heat, transfer to main bowl and mix.
  6. Sift flour, cocoa powder, baking powder, and salt into the bowl.
  7. Mix until partly combined, then fold in chopped chocolate chunks.
  8. Prepare a baking pan with parchment paper.
  9. Transfer batter to the prepared pan and smooth the top.
  10. Sprinkle reserved chocolate chunks on top.
  11. Bake at 350 degrees F (180 degrees C) for 30-35 minutes.
