- 2 tablespoons espresso or strong pour over coffee
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup unsalted vegan butter
- 1 cup dairy-free dark chocolate
- 1 cup all-purpose flour
- 1/3 cup Dutch processed cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt

Steps
- Combine flax seeds, water, and espresso in a bowl.
- Add granulated sugar, brown sugar, and vanilla extract.
- Set up a double boiler with water in a saucepan and heat.
- Add unsalted vegan butter and dairy-free dark chocolate to the double boiler bowl.
- Melt chocolate mixture, remove from heat, transfer to main bowl and mix.
- Sift flour, cocoa powder, baking powder, and salt into the bowl.
- Mix until partly combined, then fold in chopped chocolate chunks.
- Prepare a baking pan with parchment paper.
- Transfer batter to the prepared pan and smooth the top.
- Sprinkle reserved chocolate chunks on top.
- Bake at 350 degrees F (180 degrees C) for 30-35 minutes.
