Spicy Thai Basil Stir-Fry

Ingredients
- 4 or 5 Garlic cloves
- 3 Small bird chilies (or similar small spicy chili)
- A few Large mild chillies (for color)
- 1 (or desired amount) Zucchini
- As needed Pork and beef mixture (or preferred protein like chicken/turkey)
- To taste Oyster sauce
- To taste Fish sauce (or soy sauce)
- A dash Sugar or honey
- As needed Oil
- As desired Thai and Italian basil mixture
- As desired Brown rice (or other preferred rice/noodles)

Steps
- In a mortar, combine the garlic cloves with skins and all. Peel them off.
- Add the small bird chilies to the mortar. Roughly chop the large mild chillies into pieces for color.
- Combine the chopped garlic and chilies in the mortar until they are broken down into a paste or coarse mixture.
- In a separate bowl, mix the stir-fry sauce by combining oyster sauce, fish sauce (or soy sauce), and a dash of sugar or honey.
- Heat oil in a pan over medium heat. Add the garlic and chili mixture from the mortar to the hot oil and sauté until fragrant.
- Add the meat (pork and beef mixture) to the pan and stir-fry until it is cooked through.
- Add the zucchini chunks to the pan and toss them, ensuring they maintain their shape and integrity.
- Pour in the prepared sauce and toss everything together. Cook for a few minutes until the ingredients are coated and heated through.
- Stir in the basil mixture (Thai and Italian) and continue tossing briefly until the basil wilts slightly.
- Serve the stir-fry over a bed of brown rice or noodles.
