Steps

  1. In a mortar, combine the garlic cloves with skins and all. Peel them off.
  2. Add the small bird chilies to the mortar. Roughly chop the large mild chillies into pieces for color.
  3. Combine the chopped garlic and chilies in the mortar until they are broken down into a paste or coarse mixture.
  4. In a separate bowl, mix the stir-fry sauce by combining oyster sauce, fish sauce (or soy sauce), and a dash of sugar or honey.
  5. Heat oil in a pan over medium heat. Add the garlic and chili mixture from the mortar to the hot oil and sauté until fragrant.
  6. Add the meat (pork and beef mixture) to the pan and stir-fry until it is cooked through.
  7. Add the zucchini chunks to the pan and toss them, ensuring they maintain their shape and integrity.
  8. Pour in the prepared sauce and toss everything together. Cook for a few minutes until the ingredients are coated and heated through.
  9. Stir in the basil mixture (Thai and Italian) and continue tossing briefly until the basil wilts slightly.
  10. Serve the stir-fry over a bed of brown rice or noodles.
