- Add half a cup of melted and cooled butter to a mixing bowl.
- Add half a cup of coconut sugar, one large egg, and two teaspoons of vanilla extract to the bowl.
- Whisk together until smooth.
- In a separate bowl, add 1 and 1/2 cups of rolled oats.
- Add 1 cup of almond flour, 1 teaspoon of ground cinnamon, 1 teaspoon of baking soda, and 1/2 teaspoon of kosher salt.
- Whisk together until combined.
- Pour the wet mixture into the dry ingredients and stir until combined.
- Add 3/4 cup of mixins (e.g., raisins or chocolate chips).
- Line a baking sheet with parchment paper.
- Use a medium cookie scoop to dollop dough onto the parchment paper.
- Gently pat dough into cookie shape.
- Bake for 9 to 10 minutes until slightly golden.
