Oatmeal Cookies

  • 1/2 cup butter
  • 1/2 cup coconut sugar

Steps

  1. Add half a cup of melted and cooled butter to a mixing bowl.
  2. Add half a cup of coconut sugar, one large egg, and two teaspoons of vanilla extract to the bowl.
  3. Whisk together until smooth.
  4. In a separate bowl, add 1 and 1/2 cups of rolled oats.
  5. Add 1 cup of almond flour, 1 teaspoon of ground cinnamon, 1 teaspoon of baking soda, and 1/2 teaspoon of kosher salt.
  6. Whisk together until combined.
  7. Pour the wet mixture into the dry ingredients and stir until combined.
  8. Add 3/4 cup of mixins (e.g., raisins or chocolate chips).
  9. Line a baking sheet with parchment paper.
  10. Use a medium cookie scoop to dollop dough onto the parchment paper.
  11. Gently pat dough into cookie shape.
  12. Bake for 9 to 10 minutes until slightly golden.
  13. Cool on baking sheet for 5 to 10 minutes before serving.
